Pumpkin Pie - Perfect Thanksgiving Day Dessert

Pumpkin Pie is a very tasty dish. Here is the recipe:

Crust:
1&1/2 cups of all purpose flour (maida)
1/2 cup (8 Tbls.) butter
cold water

Filling:
6 cups Pumpkin cubed
3 cups Milk
2 cups Sugar
1 tbls. Butter
1 egg
1/2 tsp. Cinnamon powder
2-3 cardamom powder

Wipped cream for decoration

Method:

filling:
In a heavey bottom pan boil milk with pumpkin. Add sugar and let it cook. Add butter. It would take 15 to 20 minutes for pumpkin to cook. Mash it with a masher or in a blender. Add Cinnamon powder and cardamom powder and mx well. Beat the egg and mix with pumpkin.


Making crust:
Add cold softened butter in All purpose flour (Maida) and rub with hand so that it looks like breadcrumbs. Add little water and make soft yet firm dough. Keep it in refrigerator for at least one hour. Remove and roll it about 9" round and in 1/4" thinkness. Put it in pie dish and firmly press it. cut the extra crust from above. Make decorating edging using your thumb and fingers. Bake it in 350 degree oven for 10-15 minutes. Remove from heat. Turn the heat dial to 425 degree temprature.

Now pour the filling in pie dish over crust. Spread it eveanly. Bake it in 425 degree for 15-20 min. Reduce heat to 375 degree and bake for 20 to 25 minutes more or until the stick comes out clean.

Let it cool. Decorate with wipped cream.
