Pineapple upside down Cake By Sherly at 2008-01-08 14:39:43

Ingredients:
1 tin sliced Pineapple Cherry in syrup 1 cup brown sugar 8 tbls. butter (1/2 cup or 1 stick)
(You can use Yellow Cake Mix to make cake. If not I am writing recipe of Yellow Cake. )
For Cake: 2 cups Maida or all purpose flour 250 grm. butter (1 cup or 2 stick) 1 cup sugar 1 pinch salt 1/2 tsp. Baking Powder 5 eggs 3/4 cup milk
Directions:
Cake Recipe: Mix flour, salt baking powder and sieve together two times. Cream butter and sugar togehter until light and fluffy. Add eggs one by one still beating the sugar and butter mixture. slowly add flour and milk alternatively. Mix well The batter should be smooth.
Take an ungreased baking pan of 13x9x2" Melt 1/2 cup(1 stick) of butter in pan and sprinkle brown sugar evenly in the pan. Arrange the pinapple slices in the pan and a cherry in the middle of the slice. Pour the cake mixture over the pinapple slices. Bake for 40-50 minutes in 350 degree oven. Insert a stick or knife and if it comes out clean your cake is done.
Let it cool for 5 minutes. Carefully insert knife around all the sides of cake so that it may loosen from sides. Carefully invert the baking pan over a tray or fitting lid. Viola your cake is ready.
