My Mom's Fruit Cake

My Mom's Fruit Cake
My mom used to make this cake very often. But she never soaked fruits instead she mixed dry fruits directly in the flour. I read in the internet that if fruits are soaked in alcoholic beverages like rum etc. it taste good. But because we never brought any alcoholic beverages in our home and because of our faith in Jesus Christ it cannot be brought in our homes, I tried to soak in Coke (Coca-cola) or in soda.

2 cups of Maida (All purpose flour)


1/4th cup of samolina (Rawa or Soji)


2 cups of granulated Sugar


1&1/2 cups of unsalted butter (3 sticks)


8-9 eggs


1 tsp. Baking power


1 tsp. Vanila essence


1 cup chopped nuts, dates, cashew etc.


1 cup raisin and zest of one Orange soaked in 1 cup Coke


6-8 Cardamoms


6-8 Cloves (optinal)


1/4th cup Orange juice


1 pinch salt



Method:



You can soak the Raisins and Orange Zest a week ago or so. When you are ready to make cake, drain the Raisins and orange zest and keep the juice aside for later use


Start oven at 350 degrees.


Sieve Maida (Flour) with salt and baking power. Add nuts and soaked Raisins in it. Add ground cardamoms, cloves and orange zest and mix well. Set aside



In standing mixer, beat sugar and butter until sugar dissolves and the mixture becomes very light and fluffy.



Separate egg yolks from whites and make sure that there should be no part of yolk in it. Add egg yolks one by one in creamed sugar and butter. Beat after every addition. When all the egg yolks are incorporated with it, fold in flour mixture lightly. Make sure that no flour pockets remaining. • Beat separately the egg whites until having stiff peaks. Fold it in above batter. Add orange juice and liquid remaining from soaked raisins and mix well.



Pour into a greased 9" x 12" baking dish. Bake for 1 hr - 1:15 hr. Or until stick comes out clean.



Let it cool for 5-10 minutes then remove from pan. Keep it in air tight containers. If you eat it after a week or so it would taste better.
